Bike now has an MOT, used a pushbike speedo as suggested by Korova (thanks mate). The speedo magnet fitted in the floating disc mounts, just need to check calibration with sat-nav.
Had to adjust spacer at front wheel disc side as the pad was pressed hard onto the disc and getting hot. When I am happy with the set-up will post spacer details.

she's getting there keith. who made the spacers and caliper bracket? bigger front disc is my next item to be adressed. been too busy to sort an mot for mine yet.which sprocket carrier did you use? need to lose the trail mudguard on the front mate! did you shorten the sidestand . mine seems ok on flat surfaces, due to a bit of wear in the mount.

The sprocket carrier and spacers came with the wheels, just had to sort out the spacer positions, and as I said one of the spacers was incorrectly positioned which cause the front break to bind. The sprocket carrier has rubber bushes and looks different to the DR one, so assume RGV, and the rear wheel looks to have been ally welded. I am trying to draw up the caliper adaptor, it is just flat plate with 1 stop welded on.
Comparison with the GSX wheels will probably tell more on what (if anything) has been done to the wheels.
The sidestand is indeed standard, I am just being carefull where I park it as it sits a bit upright on level ground.
